  • 4 cups buttermilk (see notes for homemade substitute)
  • 1 cup sugar
  • 4 egg lightly beaten
  • 1/2 /2 cup neutral cooking oil vegetable, canola, or coconut, generic cooking oil
  • 4 cups rolled oats old-fashioned
  • 1 Tablespoon baking powder
  • 1 1/2 /2 teaspoons salt
  • 2 cups apple see note, chopped
  • 1 cup blueberries (see note)

Instructions

  1. Preheat oven to 350 degrees and grease a 9x13 baking dish.
  2. In a large bowl, add the buttermilk, sugar, eggs, and oil. Whisk to combine.
  3. Add the oats, baking powder and salt. Mix well.
  4. Add the apples and blueberries (or whatever fruit you desire) and stir gently. Pour into prepared pan. Note: If you are using frozen fruit place it on the bottom of the baking dish and pour the oat mixture over it so that the color doesn't bleed into the mixture.
  5. Bake for 45-50 minutes or until oatmeal is firm in the middle. Serve with whipped cream or yogurt.

Notes

  • Frozen fruit should be placed at the bottom of the baking pan before the oat mixture to prevent color bleeding.
  • To substitute buttermilk, add 1 tablespoon of lemon juice or white vinegar per cup of milk and let sit for 5 minutes until slightly curdled.
  • This recipe is flexible with fruit choices, allowing fresh or frozen berries and apples.
