Baked Oatmeal

Baked oatmeal combines old fashioned oats, applesauce, milk, and eggs into a warm dish dotted with berries. It has a tender yet set texture with a slightly browned top. The gentle blend of cinnamon and vanilla offers a mild spice and sweetness that complements the fresh berries inside and on top. This recipe is a good make-ahead breakfast or snack that can be reheated easily and served with maple syrup for extra flavor.

Description

The Baked Oatmeal recipe uses oats mixed with baking powder, cinnamon, and brown sugar to create a flavorful base. Wet ingredients like applesauce, milk, eggs, melted butter, and vanilla extract bind the mixture before folding in berries. Baking at 350°F in a greased dish produces a golden, tender baked dish with berries bursting through. The texture is hearty and moist, suitable for spooning out in squares.

It serves well as a warm breakfast or snack, enhanced by additional berries and a drizzle of maple syrup. The recipe allows using a medley of berries, adding fresh bursts of natural sweetness.

According to the notes, baked oatmeal stores for up to four days in the refrigerator. It can also be frozen by portioning into slices on parchment, then frozen solid and stored in freezer bags. Reheating in the microwave for 30 to 40 seconds restores warmth and softness.
