  • 1/2 c. all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 c. Monterey jack cheese shredded
  • 2 c. cottage cheese
  • 8 oz ham diced
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat eggs with a hand mixer on medium speed for 3 minutes or until light and lemon-colored. Combine the flour, baking powder and salt in a different bowl. Gradually add eggs and mix well. Stir in cheeses and ham.
  3. Pour into greased 13x9 in. baking dish. Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.

Notes

  • The baked omelette keeps well refrigerated for 3-4 days and can be frozen in portions for months.
