Ingredients

Servings
  • 1 large yellow onion
  • 1/3 cup all-purpose flour
  • 1 ½ teaspoons seasoning salt
  • 1/2 teaspoon chili powder
  • 2 large egg
  • 2 ¼ cups panko breadcrumbs

Instructions

  1. Preheat oven to 450 degrees F. Spray a large rimmed baking sheet generously with nonstick spray. Set aside.
  2. Peel off the outer layer of the onion. Cut off the ends and slice the rest of the onion into thick rings. Separate the rings and place in a bowl of water.
  3. In a medium bowl, whisk together the flour, seasoning salt, and chili powder.
  4. In a separate bowl, whisk the eggs together.
  5. In a third bowl, add the Panko breadcrumbs.
  6. Taking one onion ring at at time; toss it in the flour mixture, coating very well. Then dunk it in the eggs, being sure to coat all sides. Toss the ring in the Panko crumbs to coat. Place coating rings on the prepared baking sheet. Repeat process with all remaining rings.
  7. Bake for 12 to 15 minutes until golden brown. Remove from oven and serve warm with your favorite sauces. Enjoy!
