Ingredients

  • 1 ½ lbs potato cut into 1/2-1” cubes (no bigger!, red
  • 2 garlic cloves, minced
  • 3 tablespoons green onion chopped
  • 1/4 cup Parmesan Cheese grated
  • 1 1/2 tablespoons ranch seasoning mix dry
  • 1 teaspoon parsley dried
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter cubed

ADD later:

  • 1/2 cup Bacon cooked and crumbled
  • 3/4 cup mozzarella cheese shredded
  • 3/4 cup cheddar cheese shredded

Instructions

  1. Grease a 12” cast iron skillet with 1 tablespoon olive oil. Set aside. (If you are baking, you can also use a comparable baking dish.)
  2. Add potatoes, garlic and green onions to a large microwave safe bowl. Add 2 tablespoons water. Microwave, covered, 3 minutes, drain and add to greased skillet along with all ingredients through pepper. Stir to combine.
  3. Dot with butter. Cover tightly with foil. (You can prep up to this point if you are taking camping).**

TO GRILL

  1. Grill, covered, over medium high heat (350 degrees F) for 10 minutes then stir potatoes, replace foil, cover, and continue to grill 10-15 additional minutes OR until potatoes are tender.
  2. Carefully open foil (there will be a lot of steam). Sprinkle with bacon and cheeses, cover and grill another 3-5 minutes or until cheese is melted.
  3. Open foil carefully and enjoy! Drizzle with ranch or serve with sour cream if desired.

TO BAKE

  1. Bake, covered for 25-30 minutes, stirring half way through. Test potatoes and continue to bake if needed until fork tender.
  2. Carefully open foil (there will be a lot of steam). Sprinkle with bacon and cheeses, and continue to bake, uncovered, another 3-5 minutes or until cheese is melted. Broil if desired. Drizzle with ranch or serve with sour cream if desired.

Notes

  • **You can use foil instead of a skillet - just be sure to double line and spray generously with cooking spray.
