Baked Parmesan Creamed Corn
Description
This recipe mixes canned creamed corn with drained whole kernel corn, along with eggs and flour for binding. Salt, pepper, garlic powder, and sugar provide seasoning, while Parmesan cheese folded in and sprinkled on top adds a rich, savory depth. The baking process sets the mixture into a custard-like consistency.
After an initial bake, crushed buttery crackers are added atop with melted butter drizzled over, then baked briefly to form a golden, crisp topping. This combination of creamy interior and crunchy topping creates a pleasing textural contrast.
Baked Parmesan Creamed Corn works well as a side dish for meals needing rich, slightly sweet corn flavors paired with a crispy finish. It can be served warm, slightly cooled, or reheated gently.
An optional tip includes stirring softened cream cheese into the mixture before baking for extra creaminess and cheesiness.
