Baked Parmesan Zucchini
Description
This recipe roasts quartered zucchini coated in a mixture of freshly grated Parmesan cheese, dried thyme, oregano, basil, garlic powder, and seasoning. The zucchini is first baked at 350°F until tender, which softens it while retaining shape. A brief broil at the end crisps the Parmesan and herbs, creating a flavorful crust. The olive oil drizzle helps the cheese blend and develop a golden color. Fresh parsley sprinkled on top adds a fresh herbal note.
Baked Parmesan Zucchini can be served immediately as a lightly crisp, tender vegetable side dish. The combination of herbs and crisp cheese complements hearty mains, making it suitable for everyday meals.
