  • 8 ounces pasta penne, elbow, or another favorite pasta
  • 1 tablespoon olive oil
  • 1/2 /2 medium onion diced
  • 1 tablespoon oregano divided, dried
  • 1 1/2 /2 pounds ground beef
  • 1 clove garlic minced
  • 1 (26-ounce) can tomato sauce
  • 1 (14-ounce) can diced tomatoes
  • 2 cups Monterey jack cheese shredded

Instructions

  1. Preheat oven to 350º F. Spray 9x13 casserole dish with nonstick cooking spray, set aside.
  2. Cook the pasta in boiling water according to package directions. Drain well. As pasta is cooking, drizzle olive oil into skillet over medium-low heat. Add onion and cook for about 3 minutes until translucent. Add garlic and half of oregano to skillet with onions and cook for about 2 minutes. Add ground beef to the skillet, stirring often.
  3. Add diced tomatoes, tomato sauce, and additional oregano to ground beef.
  4. Combine with the pasta and pour into prepared baking dish.
  5. Top with cheese and bake for 25-30 minutes.
