  • 8 boneless pork chops
  • 1 teaspoon ground pepper
  • ½ teaspoon salt
  • 10.5 ounces cream of chicken soup (1 can)
  • 10.5 ounces cream of mushroom soup (1 can)
  • 2 cups chicken broth
  • cups long grain rice uncooked
  • 2 ounce packet dry onion soup mix

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 9x13-inch baking dish with cooking spray and set aside.
  2. In a medium mixing bowl combine cream of chicken soup, cream of mushroom soup, chicken broth, rice and onion soup mix and mix until combined.
  3. Pour the mixture into the prepared baking dish.
  4. Season both sides of pork chops with salt and pepper. Place on top of rice mixture.
  5. Cover tightly with aluminum foil and bake for 1 hour 15 minutes to 1 hour 30 minutes, until pork chops are 145 degrees Fahrenheit and rice is fully cooked.
  6. Let rest for 5 minutes then enjoy.

Notes

  • Allow leftovers to cool completely and then transfer to an airtight container. You can also store in the baking dish, covered tightly in plastic wrap, if you prefer.
  • FRIDGE: Store leftover in the refrigerator for 3-4 days.
  • FREEZER: Thought cooked rice doesn't necessarily store the best in the freezer, you can freeze leftovers if you want. Transfer to an airtight container and store for 2-3 months.
