Baked Pumpkin Pancakes

Report
Baked Pumpkin Pancakes blend flour, pumpkin puree, and pumpkin pie spice into a thick batter baked in a glass pan for a soft, cake-like texture. The batter includes brown sugar and butter for sweetness and richness, resulting in warm, spiced pancakes served with butter and syrup.

Description

This recipe uses a combination of flour, brown sugar, baking powder, salt, and pumpkin pie spice for the dry mix, contributing to the characteristic pumpkin flavor and gentle lift. Melted butter, milk, eggs, vanilla, and pure pumpkin form the wet mix, which when combined with dry ingredients creates a thick batter.

The batter is poured into a greased 9x13 glass pan and baked at 350°F for about 20-25 minutes until set, offering an easier alternative to individual pancakes by producing a casserole-style pancake. The result is moist with the warm spices balanced by the natural sweetness of pumpkin and brown sugar.

Serve warm with butter and syrup to enhance the comforting flavors. This baked approach suits larger groups or meal prepping needs.

Leftovers can be refrigerated for up to 5-7 days and reheated briefly in a microwave, making it convenient for subsequent meals.

  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 5 Tbsp butter
  • 1 1/2 cup milk

  2. Mix together dry ingredients; flour, brown sugar, baking powder, salt and pumpkin pie spice. Set aside.
  3. Melt butter. Then gradually stir together all wet ingredients: melted butter, milk, eggs, vanilla and pure pumpkin.
  4. Once wet ingredients are thoroughly mixed, slowly add in dry ingredients, stirring until incorporated. Do not over mix.

  6. Serve warm topped with butter and syrup. Enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for 5 to 7 days.
