  • 4 purple sweet potatoes
  • 1 tablespoon extra-virgin olive oil
  • sea salt and pepper
  • butter optional
  • chives optional

Instructions

  1. Preheat the oven to 220°C/425°F and place a piece of foil on a baking tray.
  2. Wash and scrub the skins of the potatoes lightly to get rid of any dirt and soil, then pat them dry on a clean kitchen towel.
  3. Grab a fork and prick the potatoes. The holes help reduce the baking time and allow the steam to escape.
  4. Rub each sweet potato lightly with extra-virgin olive oil, and line them up onto the baking tray.
  5. Bake for 40 to 50 minutes, or until they're soft inside when pierced with a fork.
  6. Remove them from the oven, let them cool, season with salt and pepper, serve with butter and chopped chives on top, or and add your favorite toppings.

Notes

  • Place your leftover baked sweet potatoes in a shallow container and place them in the refrigerator, they can last in the fridge for 3 to 5 days.
  • Reheat them in the microwave (in 30-second intervals) or in the oven until they're heated through.
