Description

The preparation involves pounding chicken breasts to an even thinness of about 1/4 inch for uniform cooking. After whisking eggs, the chicken is dipped into the eggs and then coated thoroughly with a blend of panko breadcrumbs, ranch seasoning mix, salt, black pepper, shredded sharp cheddar, and grated Parmesan cheese. Placing the coated chicken in an oiled baking dish and baking at 425°F for 25-30 minutes yields a golden brown, crispy exterior while ensuring the chicken reaches a safe internal temperature of 165°F.

  • 2 teaspoons olive oil
  • 6 chicken breast boneless skinless
  • 2 egg large
  • 2 cups panko bread crumbs plain
  • 3 Tablespoons ranch seasoning mix
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cheddar cheese shredded sharp
  • ½ cup Parmesan Cheese grated

Instructions

  1. Preheat the oven to 425 degrees F.  Coat a baking dish with olive oil.  You may have to use 2 baking dishes depending on the size of your chicken breast.
  2. Put the chicken breasts between plastic wrap and pound out the chicken breasts with a meat mallet or rolling pin until the chicken is approximately ¼ inch thick. 
  3. Whisk the eggs together in a shallow bowl.
  4. In a separate shallow bowl, stir together the ranch seasoning mix, bread crumbs, salt, pepper, cheddar cheese and parmesan cheese.
  5. Dip the chicken breasts in the eggs and then use tongs to dip the chicken breasts in the breadcrumb mixture.  Make sure that the chicken is coated with the mixture on both sides.
  6. Then place the chicken breast in the prepared baking dish.  Continue this process until all the chicken breasts are coated.
  7. Bake for 25-30 minutes or until the chicken has reached an internal temperature of 165 degrees Fahrenheit and the top of the chicken breast is golden brown.
  8. Remove the chicken from the oven.  Let the rest for 10 minutes.  Then the chicken is ready to serve with your favorite sides and enjoy!

Notes

  • Store leftover chicken in an airtight container in the refrigerator for up to 5 days.
  • The breaded coating softens when refrigerated but can be re-crisped by reheating in the oven or air fryer.
