Description

Ingredients
- 2 teaspoons olive oil
- 6 chicken breast boneless skinless
- 2 egg large
- 2 cups panko bread crumbs plain
- 3 Tablespoons ranch seasoning mix
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup cheddar cheese shredded sharp
- ½ cup Parmesan Cheese grated
Instructions
- Preheat the oven to 425 degrees F. Coat a baking dish with olive oil. You may have to use 2 baking dishes depending on the size of your chicken breast.
- Put the chicken breasts between plastic wrap and pound out the chicken breasts with a meat mallet or rolling pin until the chicken is approximately ¼ inch thick.
- Whisk the eggs together in a shallow bowl.
- In a separate shallow bowl, stir together the ranch seasoning mix, bread crumbs, salt, pepper, cheddar cheese and parmesan cheese.
- Dip the chicken breasts in the eggs and then use tongs to dip the chicken breasts in the breadcrumb mixture. Make sure that the chicken is coated with the mixture on both sides.
- Then place the chicken breast in the prepared baking dish. Continue this process until all the chicken breasts are coated.
- Bake for 25-30 minutes or until the chicken has reached an internal temperature of 165 degrees Fahrenheit and the top of the chicken breast is golden brown.
- Remove the chicken from the oven. Let the rest for 10 minutes. Then the chicken is ready to serve with your favorite sides and enjoy!
