Baked ricotta with basil, chilli and lemon

Simple baked ricotta with basil, lemon, and chili that makes a delicious spread on bread or a hot dip.

Ingredients

  • 1 cup ricotta cheese
  • 1 - 2 cloves garlic crushed
  • pinch dried chilli flakes
  • 1/2 lemon zested
  • 2 T lemon juice about 1/2 a small lemon
  • 1 T finely chopped basil leaves
  • 1 T olive oil or Parmesan-infused olive oil
  • salt and pepper

Instructions

  1. Preheat the oven to 180 C / 350 F.
  2. Mix all the ingredients together, checking to taste as you go, and adjust the seasoning to your taste. You might like more chili or lemon. Place in a small oven dish and back for 20 minutes until it just starts to turn brown.
  3. Drizzle more olive oil over the top and serve with crackers or bread.
