Baked Salmon

Baked Salmon features a large salmon filet seasoned with salt and pepper, topped with lemon slices, and glazed with a mixture of melted butter, honey, garlic, and herbs. The filet is wrapped in foil and baked before finishing under a broiler to caramelize the glaze. This method yields moist fish with a sweet and savory coating, garnished with fresh parsley for brightness.

Description

This baked salmon begins by placing thin lemon slices on foil, then seasoning the salmon filet and setting it atop the lemons. A glaze made from melted butter, honey, minced garlic, oregano, and thyme is poured over the fish before tightly wrapping the foil to seal in moisture. Baking at 350°F cooks the salmon gently for 15 to 20 minutes, depending on thickness.

After baking, opening the foil and broiling briefly thickens and caramelizes the butter and honey glaze, adding a glossy finish and intensified flavor. The salmon is done when it reaches an internal temperature of 145°F. Fresh parsley sprinkled before serving adds a mild herbaceous note and color contrast to the rich fish.

This recipe produces a tender, flaky texture with a balance of sweet and savory tastes complemented by citrus and herbs. It can serve four or more generously depending on the size of the filet. The baking method ensures even cooking and moistness, and can be adapted to thicker or thinner pieces by adjusting time.

Store any leftover cooked salmon covered in the refrigerator for up to four days to maintain moisture and flavor. The cooking time suggestions accommodate thicker filets around two inches, which require closer to 20 minutes in the oven.

Ingredients

Servings
  • 1 large salmon filet (see note 1)
  • salt freshly ground
  • black pepper freshly ground
  • 2 lemon thinly sliced, plural
  • 6 tablespoons butter melted
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon oregano dried
  • 1 teaspoon thyme or 1/2 teaspoon dried, minced fresh
  • parsley for garnish, fresh, minced

Instructions

  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with foil and coat with non-stick cooking spray.
  2. Lay lemon slices in an even layer in the middle of the foil. Season salmon with salt and pepper on both sides. Set filet on lemon slices.
  3. In a small bowl, whisk together butter, honey, garlic, oregano, and thyme. Pour over salmon. Fold up the sides of foil, tightly wrapping the salmon.
  4. Bake until the salmon is cooked through, about 15 minutes to 20 minutes. Open foil and increase heat to broil.
  5. Broil until the butter mixture has thickened and turned into a glaze, about 2 minutes, and internal temperature reads 145 degrees on a digital thermometer. Garnish with parsley and serve.

Notes

  • A large salmon filet typically weighs 1 to 2 pounds; adjust cooking time based on thickness.
  • Thicker filets (2 inches or more) may need up to 20 minutes baking time at 350°F.
  • This recipe yields at least 4 generous servings depending on filet size.
  • Store leftover cooked salmon covered in the refrigerator for up to 4 days.
