Baked Sole in Fresh Tomato Sauce

Baked sole in fresh tomato sauce is a healthy summer dinner we make on repeat all season long.

Ingredients

  • 1 cup tomato sauce recipe here, fresh
  • 2 fillets sole
  • 1/2 cup kalamata olives pitted
  • 1/2 lemon thinly sliced
  • 3 prigs thyme leaves
  • salt to taste, cracked
  • black pepper to taste, cracked

Instructions

  1. Set oven to 400°F.
  2. Spoon a thick layer of tomato sauce into a baking pan. Lay out the fish on top of the sauce. Top with lemon slices, olives, and thyme. Sprinkle with salt and pepper.
  3. Bake for about 15 minutes until the fish is done, and then run the pan under the broiler for a minute or two to get the whole thing sizzling.
