Description

This Baked Strawberry Pie starts by preparing a chilled pie crust-lined plate, then mixing sliced fresh strawberries with sugar, flour, and ground cinnamon to form the filling. The filling balances sweetness with a hint of spice and thickens during baking thanks to the flour.

The filling is poured into the crust, then covered with a second pie crust that’s crimped at the edges for a secure seal. Two large slits on top allow steam to escape. Before baking, the crust is brushed with an egg and milk wash and sprinkled with coarse sanding sugar to create a glossy, textured top.

The pie bakes initially at 425°F for a half hour, then at 375°F for another 30 minutes, allowing the crust to brown evenly and the filling to thicken thoroughly. A foil tent can be used if the crust shows signs of over-browning. Cooling for 30 minutes helps the filling set for cleaner slices.

  • 6 cups strawberry about 1 3/4 pounds, fresh
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon ground cinnamon
  • 2 pie crust
  • 1 large egg
  • 1 tablespoon milk whole
  • 1 tablespoon sanding sugar coarse

Instructions

  1. Preheat oven to 425 degrees.
  2. Line pie plate with first pie crust and put in the refrigerator to stay cold.
  3. Slice all your strawberries and toss with sugar, flour and cinnamon.
  4. Pour mixture into the pie plate and cover with second pie crust.
  5. Fold the edges of the second crust under the edges of the first one, crimping them together.
  6. Cut two large slits into the top of the pie crust.
  7. Beat egg and milk together and brush it onto the pie crust.
  8. Sprinkle coarse sanding sugar over the top pie crust.
  9. Bake for 30 minutes, reduce the temperature to 375 degrees and bake for an additional 30 minutes. If the crust starts to burn, tent the pie with aluminum foil.
  10. Let cool for 30 minutes before serving.
