Description
Baked Sweet Potato Chips consist of paper-thin rounds of sweet potato sliced using a mandoline for uniformity. These slices are tossed gently in olive oil and laid in a single layer on parchment-lined baking sheets. A light sprinkle of kosher salt enhances their natural flavor without overwhelming the sweet potato’s character.
The chips bake slowly at 300 degrees Fahrenheit to achieve crispness without burning. Because thin sweet potato slices can go from perfect to burnt quickly, the recipe advises vigilant watching starting at 20 minutes to remove them at about 90% crisp. Residual heat finishes the crisping after removal from the oven. If some chips remain soft, additional short baking restores crunch. This method preserves the sweetness and provides a healthier homemade chip snack option.
These chips can be cooled and stored in a bowl or sealed in a plastic bag for later snacking, and reheating briefly can revive any loss of crispness.

- 1 1/2 pounds sweet potato
- 1/3 cup olive oil

Instructions
- Preheat the oven to 300 degrees F. Line several baking sheets with parchment paper and set aside. Use a mandolin slicer to cut the sweet potatoes into paper-thin rounds. (I set mine to the thinnest setting.) You can use a knife to do this, but it takes much longer.
- Pile all the sweet potato rounds into a large bowl and pour the olive oil over the top. Gently toss to coat every piece with oil. Then lay the sweet potato rounds out on the baking sheets in a single layer.
- Sprinkle the chips lightly with Diamond Crystal® Kosher Salt. Bake for 20-25 minutes until crisp and golden around the edges. Remove from the oven and cool for 5 minutes on the baking sheets. Then move the chips to a bowl, or plastic bag to store. If you happen to find a few chips with soft centers, pop them back in the oven for about 5 minutes.
Notes
- Watch chips carefully from 20 minutes into baking to prevent burning, removing when about 90% crisp as they will crisp further as they cool.
