Baked Sweet Potato Fries
Description
This recipe begins by cutting sweet potatoes into even, thin strips about 1/4 inch thick. The fries are coated with cornstarch to help create a crisper surface when baked. They are divided between two lined baking sheets to prevent overcrowding, which allows the fries to crisp rather than steam.
Olive oil is drizzled and evenly mixed with the fries along with salt and black pepper. Baking at 425°F for about 20 minutes, followed by flipping and an additional 10 to 15 minutes, produces a golden exterior with a soft, tender inside.
The resulting fries have a delicate crunch on the outside paired with the natural sweetness of sweet potatoes. They are best served immediately but can be refrigerated for a few days. Reheating in the oven or air fryer helps refresh their texture.
Store cooled fries in an airtight container in the refrigerator for up to 3-4 days.Reheat fries in a 375°F oven or toaster oven for about 5 minutes to restore crispness.An air fryer can also be used to reheat the fries effectively.
Ingredients
- 2 large sweet potato
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- ½ teaspoon salt plus more for serving
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 425°F and line two large, rimmed baking sheets with parchment paper.
- Cut both ends of the sweet potatoes to square them off. Then slice the sweet potatoes and cut each slice into thin even strips, about ¼” in thickness all around. Transfer to a large bowl.
- Sprinkle the cornstarch over the sweet potatoes and use your hands to toss together, making sure all the fries are well coated.
- Divide the sweet potato strips between the two baking sheets, and leave behind any excess cornstarch in the bowl. Drizzle the olive oil on top and season with salt and pepper. Use your hands again to toss the potatoes until there are no more visible streaks of cornstarch.
- Arrange the potatoes in a single layer, making sure not to overcrowd them. Bake for 20 minutes, then use a spatula to flip the fries and cook until they’re lightly browned and puffed, about 10-15 more minutes.
- Remove from heat, add additional salt, if desired, and serve immediately.
