Baked Sweet Potato Fries with Peanut Lime Dressing

These baked sweet potato fries are crisply roasted with a light coating of neutral oil and salt, served with a creamy peanut lime dressing featuring peanut butter, garlic, ginger, and soy sauce. The topping of fresh cilantro, peanuts, and crushed red pepper adds crunch and a mild heat. The result is a satisfying snack or side with a balance of sweet, tangy, and savory flavors.

Description

This recipe features sliced sweet potatoes cut into fries, tossed in neutral cooking oil and a pinch of salt, then baked at 425°F until blistered and browned. While the fries bake, a peanut lime dressing is prepared by whisking together natural-style peanut butter, brown sugar, minced garlic, grated ginger, lime juice, soy sauce, and neutral oil for smoothness. The fries are finished with chopped fresh cilantro, peanuts, and crushed red pepper for texture and flavor contrast.

The fries have a tender interior and slightly crisp exterior due to the oven roasting, highlighting the natural sweetness of the sweet potato. The peanut lime dressing offers bright acidity, subtle sweetness, and a hint of umami that complements the fries. Fresh cilantro and crunchy peanuts provide added freshness and nutty texture.

Neutral oils such as canola or safflower are recommended to avoid overpowering the dish's delicate flavors. The recipe works well as a flavorful side or snack, balancing the natural sweetness of the sweet potatoes with zesty, nutty dressing and mild heat.

Instructions

  1. Preheat the oven to 425ºF. Peel the sweet potato, then cut it into 1/2-inch wide fries.
  2. Smear a small amount of the cooking oil onto the surface of a large baking sheet, then smear it around making sure the baking sheet is completely coated. 4. While the sweet potato fries are baking, prepare the peanut lime dressing. In a bowl, combine the peanut butter, brown sugar, minced garlic, grated ginger, 1 Tbsp juice from the lime, soy sauce, and oil. Stir or whisk until the dressing is smooth.
  5. Roughly chop the fresh cilantro and peanuts.
  6. Once the sweet potatoes have finished baking, divide them between two plates. Drizzle the peanut lime dressing over top, then finish with a generous handful of chopped cilantro, a sprinkle of chopped peanuts, and a pinch of red pepper flakes. Serve immediately.

Notes

  • Use neutral oils like canola, safflower, or unsweetened peanut oil to avoid impacting the flavor.
  • Ensure sweet potatoes are cut evenly for uniform baking.
  • Toast peanuts lightly before topping for extra crunch if desired.
