  • 6 sweet potato medium size
  • 1 Tbsp olive oil
  • 2 tsp salt sea salt
  • Toppings:
  • 3 Tbsp butter
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Wash the sweet potatoes.  Dry and stab 6-8 times per sweet potato with a fork in various spots throughout the sweet potato.
  3. Drizzle the olive oil over the sweet potatoes and season with the sea salt.
  4. Line a baking sheet with parchment paper or foil.
  5. Place the sweet potatoes on the pan and bake for 40-50 minutes until a knife can easily be inserted and removed and the sweet potatoes are soft when squeezed gently.
  6. Serve topped with the butter, salt and pepper.  Enjoy!
