Baked Teriyaki Chicken
Description
The dish begins by arranging chicken thighs and drumsticks skin-side down in a greased baking dish and covering them with teriyaki sauce. The chicken bakes at 425°F for 25 minutes, then flips and bakes for an additional 20 minutes to ensure even cooking and tender meat.
After removing the chicken, the pan juices are simmered in a saucepan and thickened with a cornstarch-water slurry, forming a glossy sauce. This sauce is brushed over the chicken before broiling at high heat for about 3 minutes to crisp and brown the skin.
The result is teriyaki chicken with a rich, sticky glaze and contrasting textures between the tender meat and caramelized skin. Sesame seeds and thinly sliced green onions make optional garnishes to enhance flavor and presentation.
Ingredients
- 6 chicken thighs bone-in, skin-on
- 6 chicken drumsticks
- 1 tablespoon cornstarch
- sesame seeds and thinly sliced green onion, optional for garnish
Sauce
- 1 cup teriyaki sauce or homemade sauce below, thick
Instructions
- Preheat oven to 425°F. Grease a 9x13 baking dish.
- Combine sauce ingredients in a small bowl and mix well.
- Place chicken skin-down in the baking dish and pour sauce mixture over top.
- Bake chicken 25 minutes, flip over and bake an additional 20 minutes.
- Remove pan from the oven and set chicken on a plate. Cover to keep warm. Preheat the broiler to high (500°F).
- Pour juices into a small saucepan and bring to a simmer.
- Mix cornstarch with 1 tablespoon water. Slowly add to the simmering mixture while whisking until thickened. Brush the sauce over the chicken.
- Place chicken on a pan and place in the oven. Broil until crisp and browned, about 3 minutes.
Notes
- The homemade teriyaki sauce should be whisked together before baking and thickened after cooking with cornstarch to create a sticky glaze.
- Broiling crisps the sauce on the chicken and caramelizes it for added texture and flavor.
- Line pans with foil before broiling for easier cleanup.
- Garnish with sesame seeds and thinly sliced green onions if desired to add visual appeal and flavor contrast.
