Baked Zucchini Fries
Description
Baked Zucchini Fries combine spears of zucchini with a seasoned breading that includes paprika and chili powder for a hint of warmth. By salting the sliced zucchini beforehand, excess moisture is removed, helping the breading adhere and crisp up in the oven. The triple-dip breading process in flour, plant-based milk, and spiced breadcrumbs builds a thick, crunchy coat that browns nicely at 425°F during a 20-minute bake. The fries develop a satisfying crunch outside while the zucchini inside remains soft but not soggy.
The slight smoky heat from the chili powder balances the mild, fresh flavor of zucchini. These fries suit a casual appetizer or side where a lighter alternative to fried vegetables is desired. They can be served with various dipping sauces to complement their savory spices.
Variations suggested in the notes allow swapping in garlic powder, onion powder, nutritional yeast, or Italian herbs for different seasoning profiles. Using almond flour can provide a lower-carb coating, though results may vary. Fresh herbs can be sprinkled on after baking to add brightness and herbaceous character.
Ingredients
- 1 to 2 small zucchini
- 1 cup bread crumbs
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 cup all-purpose flour
- ½ cup plant-based milk unsweetened, plain
- ½ teaspoon seasoned salt
- salt to taste
- black pepper to taste
Instructions
- Slice zucchini into long and thin fries, lay them out on a tray and sprinkle on salt. Let sit for 20 minutes.
- Meanwhile, add breadcrumbs, paprika, chili powder to a bowl. In a separate bowl, add flour, and in another bowl add plant-based milk.
- After the 20 minutes passes, preheat the oven to 425 degrees F. Bring the slices one at a time through the flour, followed by the milk, and lastly through the bread crumbs. Repeat twice per zucchini fry until generously coated.
- Lay out breaded fries on a non-stick baking sheet and bake in a preheated oven for 20 minutes or until the outside of the fries are crispy.
- Remove them from heat, allow them to cool, and serve with your favorite dipping sauce.
Notes
- Sprinkling salt on the sliced zucchini and letting them sit for 20 minutes helps remove excess water for a crispier crust.
- You can tailor the breading flavors by adding garlic powder, onion powder, nutritional yeast, or Italian seasoning for different variations.
- For a low-carb alternative, almond flour can be used instead of bread crumbs, but the texture may differ.
- Fresh chopped herbs like parsley, basil, or chives can be added after baking for extra flavor and color.
