Baking Powder Biscuits
Description
This biscuit recipe uses a classic combination of flour, sugar, baking powder, salt, and shortening. Cutting shortening into the dry ingredients produces a flaky texture, while milk adds moisture to bring the dough together. The dough is gently mixed and patted into shape to avoid overworking, which keeps the biscuits tender.
Baked at a high temperature, the biscuits develop a lightly browned top with soft crumb inside. They can be sliced and served warm, complemented by butter, honey, or various jams for added sweetness.
Butter may be substituted for shortening, which tends to yield slightly softer biscuits instead of flaky. Adjusting milk quantity can help control dough stickiness. This recipe is from the House of Nash Eats Everyday cookbook.
Ingredients
- 2 cups all-purpose flour (282g)
- 1 Tablespoon granulated sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup shortening
- 1 cant cup milk
Instructions
- Preheat oven to 425°F.
- In a large bowl, combine flour, sugar, baking powder and salt. Cut in shortening using a pastry cutter until combined.
- Add milk and stir in using a fork just to bring everything together into a shaggy clump. Try not to overwork the dough by stirring too much.
- On a lightly floured surface, pat the dough into about a 1-inch thickness, then cut out using a biscuit cutter, or even just use a knife to create square biscuits and transfer to a baking sheet.
- Bake in preheated oven for 12-14 minutes, until tops barely begin to brown. Remove from oven and serve hot with butter, honey and jam.
Notes
- Butter can be used instead of shortening for softer biscuits; shortening yields a flakier texture.
- Use about a scant cup of milk; too little won't bind the dough well and too much makes it sticky, so adjust accordingly when shaping.
- Handle the dough gently to avoid overworking, which can toughen the biscuits.
