Balsamic Almond Butter Dressing
Description
Balsamic Almond Butter Dressing features a balanced mixture of balsamic vinegar and creamy almond butter, sweetened with maple syrup and enriched by olive oil. The stoneground mustard provides a subtle pungency that ties together the ingredients. Blended until smooth and adjusted with water to the desired consistency, it is ideal as a salad dressing or a flavorful sauce to enhance roasted veggies or protein dishes.
The method involves simple blending of all ingredients, with the option to whisk if needed. Adjusting the balsamic and sweetener levels allows customizing the sharpness and sweetness to taste.
This dressing keeps well in the refrigerator for up to one week; chilled dressing may thicken but can be loosened with a little water. Variations in oil types can be made, substituting almond oil, avocado oil, or pumpkin seed oil to alter the flavor profile.
Ingredients
- 3 tablespoons balsamic vinegar
- 1.5 tablespoons extra virgin olive oil
- 3 tablespoons pure maple syrup
- 1/4 cup almond butter or sub cashew butter, creamy
- 1.5 tablespoons mustard stoneground
- 1/2 teaspoon salt or to taste, fine sea salt
- 2-4 tablespoons water to thin for desired consistency
Instructions
- Add all ingredients to small blender or food processor. Blend until smooth, adding water 1 tablespoon at a time until desired consistency is reached. I typically add 3 tablespoons. Alternatively you could whisk in medium bowl, but using a blender or food processor is best.
- Taste test the dressing to make sure you're alright with the vinegar-sweetness ratio, adding more sweetener or more balsamic to taste.
- Serve with salads, roasted veggies, or even as a chicken or steak sauce.
- Store salad dressing in covered 8 ounce jar in refrigerator up to 1 week. Dressing may get thick after sitting in fridge You can add a little bit of water and stir well with spoon before using.
Notes
- Taste and adjust balsamic vinegar and maple syrup amounts to balance sharpness and sweetness according to personal preference.
- Thicken or thin dressing by adjusting water quantity; blend water in gradually to control consistency.
- Substitute almond butter with cashew butter for a different nutty flavor.
- If chilled dressing thickens, stir in a little water before serving to restore pourable texture.
- Alternative oils such as avocado oil, almond oil, or pumpkin seed oil can be used for subtle variations in taste.
