Balsamic Glaze

This Balsamic Glaze recipe reduces high quality balsamic vinegar over gentle heat until thickened, creating a syrupy sauce with balanced sweetness and acidity. An optional addition of honey lends extra smoothness and sweetness. The glaze enhances dishes like caprese salad, roasted vegetables, or crostini with its rich and tangy flavor.

Description

Balsamic Glaze begins with simmering a cup of good quality balsamic vinegar on medium-low heat. The vinegar is reduced by half over approximately 10 to 12 minutes while stirring occasionally. As it reduces, the vinegar thickens and concentrates in flavor, transforming into a syrupy glaze that maintains acidity balanced with natural sweetness.

The recipe offers the option to add honey after the reduction to adjust the sweetness if needed, depending on the type of balsamic vinegar used. The glaze will thicken further upon cooling, resulting in a pourable consistency well suited for drizzling.

This glaze pairs well with fresh capsicum salad (caprese), vegetables roasted for caramelized flavor, or as a finishing touch for crostini or bruschetta. It adds depth and brightness to various appetizers and dishes.

The notes mention that higher quality balsamic vinegars reduce better, needing less or no honey, and that about a half cup of glaze is yielded. The glaze needs to cool completely and can be stored covered in a refrigerator until ready to use.

Ingredients

Servings
  • 1 cup balsamic vinegar good quality

Optional:

  • honey pure, to taste

Instructions

  1. In a saucepan, add balsamic vinegar and bring to a low boil, over medium-low heat. Continue to cook at a low boil and stir occasionally, until liquid has reduced to half its original volume, about 10-12 minutes. It will not be very thick, as it thickens upon cooling.
  2. Taste and add honey, if needed. Use rubber spatula to fully scrape reduced balsamic vinegar into a small container with lid. Let cool completely, cover, and chill until ready to use.

Notes

  • Use a high quality balsamic vinegar for better flavor and texture in the glaze.
  • The glaze may not need added honey if the vinegar is already sweet and rich.
  • The reduction yields about 1/2 cup of glaze.
  • Let the glaze cool completely before storing in a covered container in the refrigerator.
  • Serve the glaze with caprese salads, roasted vegetables, or crostini.
