Description
The balsamic roast beef is prepared in a slow cooker where a sizeable roast (3-4 pounds) is cooked with a mixture of balsamic vinegar, beef stock, garlic, Worcestershire and soy sauce, honey, and crushed red pepper flakes. The slow cooking method tenderizes the meat and allows the marinade flavors to infuse thoroughly. Once cooked, the meat is removed and shredded gently with forks.
The flavorful cooking liquid serves as a natural gravy, combining tangy balsamic acidity with salty and sweet elements from soy sauce, Worcestershire, and honey. This gravy can be ladled over the meat as-is for serving or reduced by simmering after separating fat for a more concentrated sauce.
This roast beef works well as a main dish with gravy for serving over mashed potatoes, rice, or with bread. The rich sauce adds depth to the sliced or shredded meat, offering a balanced and hearty meal.
If you prefer a stronger sauce flavor, separating the fat and simmering the gravy until it reduces by half brings out a more intense taste and thicker consistency, ideal for spooning generously over the beef.
Ingredients
- 1 (3-4 pound) boneless roast beef chuck or round roast
- 1 cup beef stock or beef broth
- 1/2 /2 cup balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce or coconut aminos
- 1 tablespoon honey
- 1/2 /2 teaspoon red pepper flakes
- 4 cloves garlic chopped
Instructions
- Place roast beef into the insert of your slow cooker. In a 2-cup measuring cup, mix together all remaining ingredients. Pour over roast beef and set the timer for your slow cooker. (4 hours on High or 6-8 hours on Low)
- Once roast beef has cooked, remove from slow cooker with tongs into a serving dish. Break apart lightly with two forks and then ladle about 1/4 - 1/2 cup of gravy over roast beef.
- Store remaining gravy in an airtight container in the refrigerator for another use.
Notes
- For a more pronounced sauce, separate fat from the gravy and simmer it down by half after cooking.
