Balsamic Stewed Tomatoes

This recipe stews grape tomatoes with balsamic vinegar, olive oil, sugar, thyme, and salt until they soften and release their juices. The tomatoes partially burst during cooking, creating a rich, slightly sweet and tangy sauce. The combination of balsamic and thyme adds complexity beyond plain stewed tomatoes.

Description

Balsamic Stewed Tomatoes highlights ripe grape tomatoes simmered in olive oil, balsamic vinegar, sugar, thyme, and kosher salt. The tomatoes are cooked over medium heat just long enough to soften, pucker, and start popping, which releases their flavorful juices and thickens the vinegar into a glaze-like consistency. The thyme sprigs add herbal notes that balance the tang of the vinegar and the natural sweetness of the tomatoes.

This preparation results in a warm, saucy dish with tender but intact tomatoes that can be served hot as a side or topping. The vinegar reduction gives a pleasant acidity that complements the fruitiness and soft texture of the tomatoes.

Serving this while hot allows the balsamic sauce to coat the tomatoes nicely. It pairs well alongside grilled meats or can be spooned over toasted bread for a simple appetizer. The subtle sweetness and herbal character derived from the sugar and thyme bring out more complexity than basic stewed tomatoes.
