Ingredients
- 5 Roma tomato or a mix of tomato varieties like cherry, heirloom, etc
- ¼ red onion
- ½ English cucumber large
- basil as much as you’d like!, fresh, chopped
- balsamic vinegar for drizzling (approx 1-2 TBSP)
DRESSING
- 1 lemon , squeezed for juice
- 1 clove garlic (peeled and minced)
- ¼ cup extra virgin olive oil
- 1 TBSP white wine vinegar
- ¼ tsp salt or extra to taste
- ⅛ tsp black pepper or extra to taste
Instructions
- First chop those veggies! Cut Roma/plum tomatoes in half lengthwise then horizontally into slices. If adding cherry/grape tomatoes to the mix, slice in half lengthwise. Chop or slice onions Chop basil into ribbons.
- Next let's make the dressing! Squeeze juice from lemon and mince garlic. Combine with remaining ingredient and season to taste.
- Combine tomato, onion, and basil with dressing and mix well to coat.
- Drizzle with balsamic vinegar and allow mixture to sit for 10-20 minutes. The longer this salad sits, the more pronounced the flavors will be. Serve with your favorite main dish and enjoy!
