Flour, baking soda, and salt are folded in just until combined to maintain a tender crumb. The batter is poured into a greased loaf pan and baked at 350°F for 50 to 60 minutes, with foil loosely covering after 20 minutes to prevent excessive browning. Near the end, brown sugar is sprinkled on top to create a sweet crust. After baking, the bread is cooled for 15 minutes before slicing.

The resulting loaf is moist and flavorful with a soft crumb, suitable for breakfast, snacks, or desserts.

  • 4 Tablespoons butter (softened)
  • 1/4 cup neutral cooking oil such as canola oil, generic cooking oil
  • 1 cup sugar
  • 2 large egg
  • 2 teaspoons vanilla
  • 3 Ripe banana
  • 1/4 cup sour cream full-fat
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar (to sprinkle on the bread during the last 5-10 minutes of baking)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together butter, oil, and sugar. Cream for 3-4 minutes.
  3. Add eggs and vanilla and beat for 1 minute.  Add bananas and sour cream. Stir well until combined.
  4. Stir in flour, baking soda, and salt. Mix just until combined. Pour into greased approximately 8.5 x 4.5 x 2.75 inch loaf pan.
  5. Bake for 50-60 minutes or until toothpick comes out clean. Cover with foil after about 20 minutes to prevent burning. Sprinkle bread with brown sugar about 5-10 minutes before the end of baking time. 
  6. Let cool for 15 minutes before slicing.
