Banana Bread
Description
The recipe starts by creaming brown sugar with softened butter until light, then mixing in eggs and ripe mashed bananas. Dry ingredients, including all-purpose flour, baking soda, and salt, are incorporated until just combined to avoid overmixing. The batter is poured into a greased loaf pan and baked at 350 degrees Fahrenheit for around an hour, until a toothpick inserted into the center comes out clean.
The resulting banana bread features a golden crust with a moist interior that highlights the banana's natural sweetness, balanced by the brown sugar and vanilla from the butter and eggs. It can be sliced for breakfast, snacks, or dessert, and pairs well with butter or spreads.
Avoid using oil in place of butter to maintain moisture. Store the bread wrapped tightly or in an airtight container to prevent drying. It can be refrigerated for up to a week or frozen wrapped in plastic and foil for up to two months.
Ingredients
- ¾ cup brown sugar packed
- 1 cup butter softened
- 2 egg
- 4 banana
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat oven to 350 degrees F. Spray a loaf pan with non-stick spray and set aside.
- Add sugar and butter to large mixing bowl. Beat until light and fluffy.
- Add eggs and bananas to the bowl and mix until combined.
- Then add the rest of the ingredients and mix until just combined.
- Pour batter into a greased loaf pan.
- Bake at 350 degrees F for 1 hour or until the bread tests done by inserting toothpick in the middle and it comes out clean.
Notes
- Test for doneness by inserting a toothpick near the center; it should come out clean to confirm the bread is fully baked.
- Use butter rather than oil to keep the bread moist, as oil can result in a drier texture.
- Wrap the bread in plastic wrap or store in an airtight container to maintain freshness and prevent drying.
- Refrigerate to extend shelf life up to one week or freeze wrapped in plastic and foil for up to two months.
