Banana Bread French Toast
Description
This variation of French toast uses banana bread as the base, which should be slightly dried out to absorb the custard batter evenly. The egg mixture is flavored with vanilla, ground cinnamon, and nutmeg, enhancing the banana bread's warmth and sweetness.
After soaking, each slice is dredged in crushed cornflakes, which create a crisp outer coating during pan-frying in butter. Cooking is done over medium heat until the exterior is golden and crunchy with a tender interior. The result is a textured French toast that combines the soft crumb of banana bread with a crunchy crust.
Banana slices and maple syrup served on top add freshness and a complementary sweetness. This recipe is suitable for a full loaf of banana bread, making it ideal for sharing or multiple servings.
