Ingredients
Banana Bread Pudding:
- 4 medium bananas , firm
- 16 ounces sandwich bread , day old-cubed
- 1/4 cup unsalted butter , melted
- 8 large eggs
- 4 cups whole milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
Vanilla Pecan Sauce
- 1/2 cup light brown sugar
- 1 tablespoon flour
- 1 pinch ground cinnamon
- 1 large egg
- 2 tablespoons unsalted butter , melted
- 1 1/4 cups whole milk
- 1/2 cup pecans , finely chopped
- 1 pinch salt
- 1 tablespoon vanilla extract

Instructions
Banana Bread Pudding:
- Preheat oven to 375 degrees and spray a 9x13 baking dish with baking spray.
- Slices the bananas into 1/4 thick slices.
- Layer in the bread and sliced bananas evenly (1/2 bread, 1/2 bananas, rest of bread, rest of bananas).
- In a large bowl whisk together melted butter, eggs, milk, sugar, and vanilla extract.
- Pour over bread mixture.
- Let soak for 15 minutes.
- Bake for 60-70 minutes until custard is gone and the top is slightly browned.
Vanilla Pecan Sauce:
- Whisk everything but the vanilla in a saucepan over medium heat constantly for 10 minutes until thickened enough to coat the back of a spoon.
- Remove from heat and add in the vanilla. Serve over the pudding.
