Banana Cake:

  • 1/2 cup butter at room temperature
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 medium ripe bananas mashed

Cream Cheese Frosting:

  • 1/2 cup butter at room temperature
  • 1 (8 oz) package cream cheese at room temperature
  • 2 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 350ºF. Grease a 9x13-inch baking pan.
  2. In a large bowl, cream together the butter and sugar.  Add the eggs, one at a time, mixing in-between additions. Stir in the sour cream, then the vanilla extract.
  3. In another bowl, mix together the flour, baking soda and salt.
  4. Add the dry ingredients to the wet ingredients, then stir in the mashed bananas.  Transfer the batter to the prepared baking pan.
  5. Bake until a tester inserted in the center comes out clean, 30-40 minutes.  Cool the cake completely before frosting.
  6. To make the frosting: Beat the butter and the cream sugar together in a bowl until smooth. Slowly add the powdered sugar and mix until completely smooth. Frost the cake with the frosting.
