Banana Chocolate Chip Pancakes

Banana Chocolate Chip Pancakes combine ripe mashed bananas with a classic pancake batter enriched by mini chocolate chips and chopped walnuts. The texture is tender with moistness from the bananas and a slight crunch from the nuts. Cooking them on a griddle allows for a golden crust on both sides, making them enjoyable fresh off the pan. They are practical for breakfast or brunch when you want a comforting pancake infused with natural sweetness and subtle nutty accents. Serving with sliced bananas and real maple syrup completes a balanced and satisfying plate.

Description

Banana Chocolate Chip Pancakes are a variation on traditional pancakes where mashed ripe bananas are blended into the wet ingredients, providing natural sweetness and moisture. The batter also includes vanilla extract, milk with vinegar to mimic buttermilk, and oil for richness. Flour, sugar, salt, and baking powder create the structure and leavening needed for fluffy pancakes. Mini chocolate chips and chopped walnuts are sprinkled on top of each pancake before flipping, adding bursts of chocolate flavor and textural contrast.

The cooking method involves pouring the batter in measured portions on a lightly greased skillet or griddle and flipping when bubbles appear and the bottom side turns golden brown. The final pancakes are tender with a moist crumb and slightly crisp edges. Serving them warm with additional banana slices, chocolate chips, walnuts, and real maple syrup provides a satisfying balance between fruity sweetness and richness.

This recipe works well for a weekend breakfast or brunch where a special twist on classic pancakes is welcome, combining easy preparation with familiar ingredients and textures.

Ingredients

Servings
  • 1 1/2 banana very ripe
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk skim
  • 1/2 teaspoon white vinegar
  • 2 tablespoons canola oil or melted butter
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • mini chocolate chips
  • walnuts chopped
  • maple syrup real

Instructions

  1. In a large bowl, mash ripe bananas well. Whisk in egg, vanilla, milk, vinegar, and oil.
  2. Add in flour, sugar, salt, and baking powder. Whisk until batter is mostly smooth. (A few lumps are ok!)
  3. Preheat a lightly greased nonstick skillet or griddle over medium-medium low heat. Using a 1/4 cup dry measure, pour batter onto hot skillet and spread into a 4-inch circle. Sprinkle mini chocolate chips and chopped walnuts onto the tops of the pancakes. Flip when bubbles start to form on the pancake surface and the bottom is golden brown. Cook another minute or until the bottom is also cooked. Remove from the hot pan.
  4. Repeat the process until no more batter remains. Serve warm with sliced bananas, extra chocolate chips, walnuts, and real maple syrup.

Notes

  • Adding 1/2 teaspoon ground cinnamon to the batter can enhance the flavor subtly.
