Banana Chocolate Chunk Muffins

Ingredients

  • 3 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup white sugar
  • ¼ cup vegetable oil
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 very ripe bananas, mashed well
  • 1 cup buttermilk
  • ½ cup semi-sweet chocolate chunks
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 425 degrees. Coat a muffin pan with cooking spray.
  2. Prepare the banana bread muffins by whisking together the flour, baking powder, and salt together in a small bowl until well combined.
  3. In a separate bowl whisk together the sugar, vegetable oil, melted butter, eggs, and vanilla until well combined. Add the mashed banana and mix well.  
  4. Alternate mixing in the dry ingredients and the buttermilk to the banana mixture until just combined. 
  5. Fold in the chocolate chunks and chocolate chips. 
  6. Pour the batter equally into the muffin pan filling them to the top. Sprinkle some coarse turbinado sugar on top of each muffin.
  7. Place into the oven and bake for 5 minutes. Reduce the heat to 350 degrees and continue to cook for 13-15 minutes, or until a tester inserted in the center comes out clean. Side Note: Starting the baking at a higher temperature then reducing it helps make the muffin dome.
  8. Remove from the oven and cool in the pan for a few minutes before putting them on a wire rack to finish cooling. Serve and enjoy.
