  • 1 cup sugar
  • 2 large egg beaten
  • 1 cup banana mashed, ripe
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour

  • 1 teaspoon baking powder
  • 1 cup pecans , chopped

Streusel Topping

  • 1/2 cup pecans , chopped
  • 1/4 cup brown sugar , packed
  • 1 teaspoon ground cinnamon

Instructions

Banana Cake

  1. Preheat oven to 350 and spray springform pan with baking spray.
  2. Whisk together sugar, oil, eggs, banana, sour cream and vanilla extract in a large bowl together until smooth.
  3. Sift flour, baking soda and baking powder in a second bowl then add it to the wet mixture and whisk until just combined.

Streusel Topping

  1. Mix pecans, brown sugar, and cinnamon in a bowl; sprinkle over cake batter.

To Finish

  1. Bake for 45 minutes, until a toothpick inserted into the center comes out clean.
