Banana Date Protein Pancakes

Banana Date Protein Pancakes combine a handful of simple ingredients into a gluten free, vegetarian, packed with protein, breakfast recipe!

  • 2 banana mashed, ripe
  • 2 egg whisked, large
  • ½ cup protein powder brand: Beaming
  • 2 tbsp flax seeds ground
  • 5 dates seeded & chopped

Optional Topping

  • ¼ cup peanut butter

Instructions

  1. Combine mashed bananas, eggs, protein powder and flax seeds together in a medium bowl.
  2. Add the chopped dates.
  3. Place a large skillet on the stovetop over medium heat, coat with cooking spray.
  4. When hot, pour the batter into the skillet.
  5. Cook 3-5 minutes, flip, then cook for an additional 3-5 minutes.

Optional Topping

  1. Place the peanut butter in a microwave safe dish.
  2. Heat for 60 seconds in the microwave, then pour over the pancakes.
