Ingredients

Servings
  • 1 1/2 lbs (750g) banana peeled, overripe
  • 1 1/4 cups granulated sugar
  • 2 tablespoons brown sugar
  • 3 tablespoons lime juice fresh
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 3 ground cinnamon dashes
  • 1 tablespoon rum optional

Instructions

  1. Mash the bananas with the back of a fork or a potato masher until they have tiny chunks.
  2. Transfer the mashed bananas to a pot and simmer over low heat. Add the sugar, brown sugar, lime juice, water, and salt, stirring to combine well.
  3. Continue to simmer, stirring occasionally, for about 10-15 minutes, until the banana jam thickens slightly. Stir in the ground cinnamon and rum, if using.
  4. Remove from heat and let cool completely before transferring the jam to an airtight container.
  5. You can keep the banana jam in the refrigerator for up to 2 weeks.
