Banana Macadamia Nut Cake Recipe

For the cake:

  • ½ cup butter softened, unsalted
  • 1 cup granulated sugar
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 2 banana about 1 1/4 cup mashed, large, ripe
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup macadamia nuts pieces

For the frosting:

  • ½ cup butter softened, unsalted
  • ½ teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 Tablespoon milk whole

Instructions

  1. Preheat oven to 350 degree F. Spray a 13x9 baking dish with baking spray. Set aside.
  2. For the cake, beat butter and sugar until creamy, about 3-5 minutes. Beat in egg and vanilla. Add in bananas, beating until smooth and mashed.
  3. Add in flour, baking powder, baking soda, and salt. Fold in macadamia nut pieces. Pour into prepared baking dish.
  4. Bake for 23-25 minutes until toothpick poked in center comes out clean. Remove from oven and cool completely.
  5. For the frosting, beat butter, vanilla, powdered sugar, and milk for about 4-5 minutes until fluffy. Spread over cooled cake and sprinkle with macadamia nut pieces. Serve and enjoy!

Notes

  • Test for done-ness with a toothpick. Insert it into the center of the cake after 23 minutes in the oven. If it comes out clean, the cake is done. If the toothpick comes out wet, leave the cake in the oven for another 2 minutes and check again.
  • Store covered. Cover any leftovers with plastic wrap or foil and store at room temperature. You can store it right in the pan OR transfer leftover slices of cake to an airtight container!
