Banana muffins with millet flour

Quick and easy to make wholesome muffin recipe. Vegan, glutenfree, and fatfree: perfect for a Medical Medium diet. Naturally sweetened with bananas, coconut flower sugar and cinnamon.

Ingredients
- 1 1 cup bananas = about 2 medium sized bananas
- 1 1 cup millet or storebought millet flour
- 2 2 tbsp coconut flower sugar
- 2 2 teaspoons baking powder (corn + aluminum free)
- 2 2 teaspoons cinnamon

Instructions
- Preheat the oven to 390F or 200C. Prepare 3 cupcake molds or a tin.
- Grind the millet into flour.
- Mix the flour with the baking powder, sugar and cinnamon.
- Mash the bananas well (they have to get moisty) and add.
- Fill three moulds and place in the oven for half an hour.

- I prefer using both paper baking cups and a (ceramic) muffin tin and place the paper cups in the tin. This makes the cups stable when filling and easy to handle.
