  • 1 ½ cups banana about 3 large or 4 medium very ripe bananas, mashed
  • 6 tablespoons butter melted and slightly cooled, salted
  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup walnuts chopped

Instructions

  1. Preheat the oven to 350°F. Grease an 8½ x 4½-inch loaf pan; set aside. In a medium bowl, sift or whisk together the flour, nutmeg, cinnamon, baking soda, and salt. Set aside. In a separate large bowl, whisk together the mashed banana, melted butter, sugar, egg, and vanilla extract.
  2. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts. Pour the batter into the prepared loaf pan.
  3. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
  4. Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.
