Banana Nut Muffin Recipe

Classic Banana Nut Muffins, so soft and moist, are the perfect way to use up ripe bananas and make a simple breakfast.

  • 1/2 cup butter room temperature, unsalted
  • 1/2 cup sugar
  • 1 tablespoon brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 banana mashed, ripe
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt fine sea salt
  • 1/2 cup walnuts , finely chopped

Instructions

  1. Preheat oven to 350°F. Line muffin tin wells with liners.
  2. Cream the butter, white sugar and brown sugar together in a large mixing bowl. Add the egg and vanilla and blend again and then add the mashed bananas.
  3. Sift together the flour, nutmeg, cinnamon and salt. Slowly add to the banana batter.
  4. Fold in the walnuts by hand. Do not overmix the batter.
  5. Fill each muffin tin approximately 1/2-3/4 full. Bake for 15-20 minutes or until tops spring back when gently pressed.
