Banana Peanut Butter Oat Bars

Banana Peanut Butter Oat Bars combine mashed ripe bananas with creamy peanut butter, maple syrup, and rolled oats for a chewy, mildly sweet snack. Optional vanilla, cinnamon, and chocolate chips add depth and indulgence. These bars bake to a firm texture with golden edges, making them convenient for on-the-go eating or a light treat.

Description

Banana Peanut Butter Oat Bars mix mashed ripe bananas with peanut butter and maple syrup, creating a naturally sweetened base. Rolled oats provide structure and chewiness, while optional vanilla extract and cinnamon contribute subtle aromatic notes. Adding chocolate chips introduces pockets of melted sweetness that contrast with the wholesome oat mixture.

Baked in a square pan until golden brown around the edges and firm to the touch, these bars hold their shape well for slicing and serving. The texture is chewy with slight softness inside and gentle crisping at the edges.

These bars are suitable for snacking or a quick breakfast, offering a balance of carbohydrates and fat for sustained energy. They store well refrigerated for several days and freeze effectively for longer storage. Reducing or omitting chocolate chips can lower sweetness while maintaining texture.

Ingredients

Servings
  • 3 banana 1 ½ cups mashed, ripe
  • cup peanut butter creamy
  • 3 Tbsp pure maple syrup
  • 1 tsp vanilla extract optional, pure
  • 2 cups rolled oats
  • ¼ tsp salt sea salt
  • 1 tsp ground cinnamon optional
  • 1 cup chocolate chips optional*

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a 8” x 8” baking pan with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until creamy. Stir in the creamy peanut butter, pure maple syrup, and vanilla extract.
  3. Transfer the oats, sea salt, and cinnamon (dry ingredients) to the large bowl with the wet ingredients and stir until a thick dough forms. If adding, stir in the chocolate chips until they are well-incorporated throughout the dough.
  4. Spread the banana peanut butter oat mixture into the prepared baking pan and use a rubber spatula to spread it into an even layer. If you’d like, sprinkle extra chocolate chips on top of the batter.
  5. Place the baking dish on the center rack of the preheated oven and bake for 20 to 25 minutes or until the healthy banana oatmeal bars are golden brown around the edges and feel firm when gently poked.
  6. Allow the bars to cool to room temperature before slicing and serving.

Notes

  • Store bars in an airtight container in the refrigerator for up to 5 days to maintain freshness.
  • For longer storage, freeze bars in a freezer bag for up to 3 months; thaw before serving.
  • Sugar-free or no chocolate chips can be used to reduce sweetness without sacrificing texture.
  • Cutting into 12 bars helps portion control and calorie management.
