  • 1 3/4 cups white whole-wheat or all purpose flour (230 grams)
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup mashed ripe banana (about 2 large bananas)
  • 1 cup crushed pineapple drained well
  • 1 cup coconut sugar
  • 2 large eggs
  • 1/3 cup avocado oil (or any neutral flavored oil)
  • 2 teaspoons vanilla

Instructions

  1. Heat your oven to 350 degrees Fahrenheit and spray a loaf pan with cooking spray, lining the bottom with parchment paper.
  2. In a medium bowl, whisk the flour, baking powder, and salt.
  3. In a separate large bowl, whisk all remaining ingredients.
  4. Add the dry ingredients into the wet ingredients and stir until just combined.
  5. Pour into the loaf pan and bake until golden brown and a toothpick inserted in the center comes out clean, about 1 hour and 10-15 minutes.
  6. Let cool completely before slicing.
