Banana Rhubarb Muffins

These Banana Rhubarb Muffins are made with absolutely no refined sugar or oils. Incredibly moist and delicious option for breakfast or a snack.

Ingredients

  • ¾ cup whole wheat pastry flour or gluten free one-to-one flour
  • ¾ cup almond meal flour
  • 2 medium banana mashed, very ripe
  • 1 cup rhubarb about 1 large stalk, finely chopped
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon allspice
  • 2 egg large
  • 1 teaspoon vanilla extract pure
  • ¼ cup honey

Instructions

  1. Preheat oven to 350 degrees F
  2. In a medium bowl, mix all dry ingredients together and set aside.
  3. Use a mixer (hand held or stand) to beat the eggs on medium speed for approx. 30 seconds.
  4. Mix in vanilla, banana and honey and blend.
  5. Add in the flour mixture in batches and mix on low speed until combined.
  6. Fold in the rhubarb slowly
  7. Pour batter into prepared muffin tin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes.
  10. You could also make this into a bread loaf if desired. Use a 8 x 4 and bake for 50-55 minutes,
