Banana Walnut Bread

This healthy banana bread is made with whole wheat flour, protein packed Greek yogurt, and toasted walnuts. It's moist and has great banana flavor!

Ingredients

Dry Ingredients

  • 2 cups white whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt fine kosher
  • 1/2 cup walnuts chopped

Wet Ingredients

  • 4 banana 2 cups mashed, ripe
  • 1/2 cup yogurt plain, Greek
  • 1/3 cup dark brown sugar
  • 1/4 cup pure maple syrup 1/3 cup if you want a sweeter banana bread
  • 3 tablespoons unsalted butter melted
  • 2 egg
  • 1 1/2 teaspoons vanilla extract or vanilla bean paste

Instructions

  1. Preheat oven to 350° F. Spray a 9×5 loaf pan with cooking spray and set aside.
  2. Whisk together the dry ingredients in a large mixing bowl, except the walnuts.
  3. Mash the bananas then whisk in the yogurt, brown sugar, maple syrup, melted butter, eggs, and vanilla.
  4. Pour the wet mixture in with the flour and fold everything together with a rubber spatula. Stir in the walnuts. Be careful not to overmix the batter or the bread will be tough.
  5. Pour the batter into the loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out with a few crumbs attached. If the bread starts to get too brown on top cover it loosely with a piece of foil. Let the bread cool in the pan for 10 minutes before removing it onto a wire cooling rack.
