  • 1 pound Shrimp peeled and deveined, medium
  • ½ cup buttermilk
  • ½ cup cornstarch
  • ½ cup mayonnaise
  • ¼ cup sriracha
  • 2 tablespoons Thai sweet chili sauce
  • 1 tablespoon honey
  • neutral cooking oil for frying, generic cooking oil

Instructions

  1. Place shrimp and buttermilk in a medium bowl and coat the shrimp well. Drain the buttermilk, and shake off the excess.
  2. Coat the shrimp pieces in cornstarch and set aside.
  3. In a bowl whisk together mayonnaise, sriracha, thai sweet chili sauce and honey.
  4. Heat oil in a deep skillet to 375°F. Once the oil is hot, fry the shrimp for 2 minutes on each side till they are a light golden brown. Remove the cooked shrimp and put on a plate lined with paper towels and pat any extra oil.
  5. Toss the shrimp in the sauce and serve immediately.
