Barbecue Baby Back Ribs Recipe
Description
The recipe starts by rinsing and drying three racks of baby back ribs, then seasoning them generously with salt, pepper, and paprika on both sides to enhance flavor. They are placed meat side up in a roasting pan, and a bottle of dark beer is poured over them, providing moisture and subtle maltiness during cooking. The ribs are tightly covered with aluminum foil to seal in steam and baked at 350°F for an hour, allowing the ribs to become tender.
After baking, finishing techniques differ: one method is to place the ribs back into the oven with homemade barbecue sauce to briefly cook and set the glaze; the other is to grill the ribs for a few minutes with sauce, developing a smoky, slightly charred crust. Instructions
- Preheat the oven to 350°F.
- Rinse the ribs and pat dry with some paper towels.
- Place the ribs in a large ovenproof casserole dish or roasting pan. I used my 16 x 12 Calphalon Roasting pan and the ribs fit fine.
- Season well with salt, pepper and the paprika. Be sure to add the seasoning to both sides and have the meaty side up.
- Pour the bottle of beer over the ribs and cover with aluminum foil. You want a tight seal so be sure to wrap the sides snugly.
- Bake in the oven for 1 hour.
