Barbecue Chicken Stuffed Sweet Potatoes

Barbecue Chicken Stuffed Sweet Potatoes feature soft-baked sweet potatoes filled with shredded chicken coated in a homemade tangy barbecue sauce. Topped with crunchy fried onions and sliced scallions, this dish combines tender, smoky, and crispy textures. The sauce’s blend of ketchup, molasses, spices, and vinegar complements the natural sweetness of the potatoes, creating a hearty and satisfying meal.

Description

This recipe starts with medium sweet potatoes baked until tender, their flesh softened for easy mashing. A homemade barbecue sauce made from ketchup, cider vinegar, molasses, and a blend of spices like smoked paprika, cumin, and cayenne is simmered to develop depth and balanced acidity. Cooked shredded chicken is mixed into most of the sauce to coat it thoroughly before being spooned into the opened sweet potatoes.

The toppings—French’s brand fried onions and thinly sliced scallions—add a layered crunch and fresh bite to contrast the tender chicken and potato. Additional barbecue sauce drizzled on top enhances the smoky and sweet flavors. The baking and slow cooking of the sauce ingredients marry the tastes well.

This dish serves as a filling lunch or dinner and is convenient because cooked chicken and baked potatoes can be prepared ahead. It works well paired with a simple green salad or steamed vegetables.

Using an air fryer is a recommended faster alternative to baking the sweet potatoes. Store-bought barbecue sauce can be substituted to save time, though the homemade version adds complexity.

Ingredients

Servings
  • 4 sweet potato washed, medium
  • 4 cups chicken shredded, cooked, can use rotisserie chicken
  • ½ cup fried onions French's brand
  • 2 scallions sliced

Barbecue Sauce:

  • cup ketchup
  • 2 tablespoons cider vinegar
  • 1 tablespoon molasses
  • 1 teaspoon smoked paprika
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F.
  2. Pierce sweet potatoes all over with a knife. Place them on a lined baking sheet and bake in the oven until soft, about 45 minutes. Remove from oven and let cool slightly.
  3. While the sweet potatoes are baking, make the barbecue sauce. Combine all of the sauce ingredients in a small saucepan and simmer over medium heat for 5 minutes.
  4. Set aside a small amount of sauce to drizzle on top. Add the chicken to the remaining sauce and toss to coat.
  5. Cut a slit lengthwise down the sweet potatoes and spread them open. Mash the flesh with a fork to soften it and spoon the barbecue chicken on top. Crush the fried onions and sprinkle them on top of the chicken. Garnish with sliced scallions. Drizzle extra barbecue sauce on top.

Notes

  • Use an air fryer to bake sweet potatoes faster if desired.
  • Store-bought barbecue sauce can replace homemade for convenience.
  • Leftover stuffed sweet potatoes can be reheated gently to preserve texture.
