Description

The Barbeque Chicken Pizza starts with pre-baking pizza dough to create a sturdy base. A thin layer of barbecue sauce forms the foundation, followed by mozzarella and thinly sliced red onion. The chicken, shredded and mixed with extra barbecue sauce, is spread over the cheese and onions. Another layer of mozzarella cheese tops the pizza, and chopped fresh cilantro adds a bright, herbaceous note.

  • pizza dough for one large pizza
  • 1 1/2 cups chicken shredded rotisserie or about 2 chicken breasts, cooked
  • 2 cups mozzarella cheese shredded
  • 1/2 cup barbecue sauce
  • 1/4 large red onion very thinly sliced
  • cilantro to taste, fresh

Instructions

  1. Preheat your oven to 450 degrees F and prebake your pizza dough for 6 minutes.
  2. Spread a thin layer of bbq sauce on top of the pre-baked pizza crust. Then top with a thin layer of mozzarella cheese and sliced red onion. 
  3. Add shredded rotisserie chicken to a bowl and cover it with a few tablespoons of bbq sauce. Toss to combine. Spread chicken pieces over the pizza. 
  4. Sprinkle another thin layer of cheese on top of the pizza, and add chopped cilantro, to taste. 
  5. Bake at 450 F for 10 -15 minutes or until crust is golden brown and cheese is bubbly.

Notes

  • You can prepare the pizza dough and prebake it up to one day in advance for convenience.
  • Store the assembled but unbaked pizza covered in the refrigerator until ready to bake.
  • Bake at 450°F until the crust is golden and cheese is bubbly for best texture.
